Chef's World Series: a taste of Bermuda, with chef Richard Zuill

Inside our latest event at The Hoxton Holborn with Bermudian chef Richard Zuill 

To kick off 2023, Condé Nast Traveller hosted the first Chef's World Series event of 2023. These dinners showcase the most exciting culinary talent around, giving our readers the chance to taste exclusive flavours from around the world, right here in London. Whether it's a private tasting,  sit-down dinner or cocktail making evening, every event is bespoke and designed to give an unique insight into a particular destination.

For our March edition, Condé Nast Traveller readers were given an exclusive taste of Bermuda, thanks to chef Richard Zuill who came to London for one night only. Since 2018 Bermudian chef Zuill has taken the cuisine at Hamilton Princess & Beach Club from strength to strength, inspired by his training in Austin, Texas. From rustling up imaginative beachside barbecues (complete with instructions on building a firepit) to making the perfect fish chowder or scone-like Caribbean Johnny bread, Zuill’s skills reflect a varied and successful career.

The evening was a celebration of Bermuda’s best-kept culinary secrets, with guests transported to a tropical paradise thanks to florals by Hayford and Rhodes, turning the Hoxton Holborn into a slice of Bermuda for one night. 

The Hoxton team welcomed guests with their potent take on Rum Swizzles, the national drink of Bermuda, made with locally produced Gosling's rum and served alongside canapés including moorish mac and cheese balls. Once guests were seated, Zuill introduced the evening's delicacies, starting with Bermudian fish chowder – a tomato-based dish spiked with a shot of Gosling’s Black Seal Rum – accompanied by Johnny Bread, a slightly sweet, scone-like bake.

The highlight of the evening was arguably the show-stopping main, lobster with tiger shrimp, served in a Gosling’s Black Seal rum broth. Ending the meal in true Bermudian style was a rum cake (yes, there is a theme throughout the meal!).
